I recently tried the Campbell’s Beef Taco Bake Recipe, and it was a good base, but it was missing a lot of things I thought would add more flavor and make it have some nutritional benefits. My whole family loves this recipe, and the best part is that it only takes about 10 minutes to prepare so you can have a yummy beef tortilla casserole everyone will love in less than 45 minutes!
Even my 19-month-old loves it!
Beef Tortilla Casserole Recipe
INGREDIENTS:
- Large Tortillas
- 28 oz can of green enchilada sauce
- 1 can of cream of mushroom or cream of chicken soup
- 1 can of diced tomatoes (drained) (or cut your own)
- 1 can of corn (drained)
- Shredded Cheese
- 2 lbs of shredded chicken
- 1 lb of bacon
- 1/2 cup of sour cream
- 1 cup of salsa or Picante sauce
- sliced green onion
- 2 teaspoons of chili powder
DIRECTIONS:
- Cook chicken (we boil ours so it gets done quicker and it is moist)
- Cook bacon
- While chicken and bacon are cooking, mix together the soup, sour cream, salsa, corn, chili powder, and tomatoes in a bowl.
- When bacon is cooked, crumble it into bite-size pieces
- When chicken is cooked, shred
- Add bacon and shredded chicken to the soup mixture, stir
- Preheat over to 350 degrees
- Place one tortilla in your hand, and spoon green sauce all over the inside
- Put a line of the soup mixture down the middle of the tortilla, then sprinkle with cheese. Roll up the tortilla, and place seam side down in a greased 14″x9″ baking dish
- Repeat until all the soup mixture has been used
- Pour remaining green sauce over tortillas (separate each tortilla with a spatula, and smear the sauce between them)
- Sprinkle with cheese
- Bake at 350 for 30-40 minutes until heated through.
- Top with sliced green onion
