If there is one thing my kids could eat 24 hours a day – it’s ice cream. If there is one thing I could eat 24 hours a day – it’s brownies and caramel ;). So we decided to compromise and make Caramel Brownie Sundae. They turned out so good! We also added in Mint Oreos just for good measure – because you really can never have enough yummy goodness right?
These are fairly easy to put together, so they are perfect for family, friends, parties, etc. We made the brownies according to the box and added caramel to the center of each one before we started baking. This was my first time trying it – and next time I will cook them for like 5 minutes first and then add the caramel just so that they don’t sink to the bottom.
Caramel Brownie Sundae
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Serving Size: 1 brownie
Ingredients
- Brownie Mix (make according to directions)
- Package of caramels
- Ice Cream
- Caramel Syrup (and chocolate if desired)
- Mint Oreo Cookies
Instructions
- Mix brownies according to the directions on the box
- Spoon mixture into cupcake pan (make sure it is well-greased)
- Cook for about 4-5 minutes
- Remove pan from oven and add one unwrapped caramel into the center of each brownie
- Continue backing until done (about 10-15 more minutes).
- Remove from oven and carefully remove brownies from the tray and set on a cooling rack (or straight into sundae bowls).
- Add brownie, scoop(s) of ice cream, drizzle with caramel (and chocolate) syrup and then sprinkle with cookie crumbs.
(I used a mini food processor to chop the cookies)
Notes – I only used about 1/2 of the batter for 12 brownies “cupcakes”. I reserved the rest for a Brownie Cheesecake, but you could do two batches of 12.
