I love making cupcakes with my kids. We have shared so many fun ideas and have many more to come. Today, we are sharing Easter cupcakes made by using a chocolate covered strawberries that
They are easy to make and look so cute! Great for Easter parties, Easter morning and more. Even fun for the kids to take to school and give to their teachers.

Easter cupcakes supplies
You will need:
- 12 (or however many you need) cupcakes (any flavor)
- Buttercream frosting
- 12 (or however many you want to make) plump strawberries with tops
- White chocolate
- Orange food coloring
- Green food coloring
- 1 package of
chocoalte sandwhich cookies - Silicone baking mat
- Leaf piping tip and bag
- Food processor (or crush Oreo’s)
Prep the strawberries
Now you have everything, the first thing you will want to do is wash and dry the strawberries. While they are drying, you can make the frosting.
Make the frosting
There is a great buttercream frosting recipe here. Take about 1/3 of the frosting and dye it green. Once the green frosting is made, put it in the fridge until ready to use.
Prep the cookies
You will now need to crush the cookies. Put the chocolate sandwich cookies in a food processor and crush them until they are fine crumbs. Put these in a bowl and set aside.
Frost the cupcakes
Take the white buttercream frosting and frost the cupcakes, one at a time. It should be a little “melted”. This is good so that it will stick to the cookie crumbs. Once you have one cupcake frosted, dip it into the cookie crumbs and it should be coated when you pull it out.
Melt the chocolate
After you have finished all the cupcakes, you will now do the strawberries. Put the cupcakes in the fridge until ready to use.
Take the white chocolate and melt for 30 seconds at a time until melted. Stir between heating to help it melt. DO NOT OVERHEAT. You can add a little oil to help it coat better. Once the chocolate is melted, you will take the orange food coloring and turn the chocolate orange.
Make the chocolate covered strawberries
When the chocolate is nice and smooth, dip the strawberry in, turning to coat all the way up to the stem (don’t let the green get covered). Set these are the baking mat to set. Once all of the strawberries are done you can put them in the fridge for about 10 minutes to help. (if you do this, you will want to put your baking mat on a cookie sheet so it is easier to move.
Assemble the Easter cupcakes
Now it is time to assemble your cupcakes. Take the leaf piping tip and put it together with a bag. Take the green frosting out and fill the bag.
Next, you will take the cupcakes out of the fridge. Take the piping tip and push straight down into the cupcake (this will create a hole where you can put the strawberry). Now take a strawberry and put it in the hole. Now you will use the piping tip and create a few random leaves on the cupcake.
Continue to assemble the cupcakes until they are all put together and then put them back in the fridge until ready to use. You can put them into bags with homemade tags to give to friends and family.
