CREAMY POTATO SOUP RECIPE

It has been a long time since I had an immersion blender and couldn’t wait. Not only does it blend food, but it can blend drinks, chop things, and more! It comes with a whole bunch of accessories that make it easy to adapt to almost any situation so you can quickly do what you need (like chopping nuts for Christmas cookies…)
My favorite recipe that we have made so far is Creamy Potato Soup Recipe with Bacon and Cheese. I made it for dinner a few nights ago and it was a big hit with the whole family. The secret is taking about 1/3 of the potatoes out and setting them aside before you blend them so it still has some chunks of potato in the delicious creamy potato soup.
I also added freshly cooked bacon (crispy) and added freshly shredded cheese. You can use pre-cooked bacon to make this dish super easy to put together (ready in less than 30 minutes start to finish). If you want to make it even faster, you can use your Mealthy Pot to cook the potatoes.
To make your Creamy Potato Soup Recipe you will need:
- 6 large baking potatoes
- 1 cup of shredded cheese
- 8 slices of crispy bacon
- 1/4 cup of sour cream
- 1 cup of milk
- 1 can of chicken broth
- 4 tbsp of butter (1/2 stick)
- Salt and Pepper to taste
Peel, wash and dice the potatoes and boil until tender. You can also cook these in your Mealthy Pot by adding the potatoes to the pot, adding about 4 cups of water (or until full) and some salt, then cook on the steam setting for about 15 minutes. When the timer is done, unplug the pot and immediately release the steam.
Once the potatoes are cooked, you are going to drain the potatoes. Take about 1/3 of the potatoes and set them aside, then take the other 2/3 and use the Mealthy HandBlend immersion blender to mash and blend the potatoes in a creamy soup. You will add the sour cream, butter, broth, and milk here as you are blending. Stir the mixture until creamy.
Once the potatoes are blended, put them back into your pot and turn heat to low – or Mealthy pot to warm – and then add the other 1/3 of the potatoes, cheese and bacon. You may choose to add a little more liquid as it heats. You want it to be creamy – not liquidy – as it is not going to have a broth. Serve hot with rolls and salad.
You can add pepper, salt, garlic, onion, chives, green onion, and any other seasonings or herbs you enjoy. This base is really delicious and it is and is easy to customize taste.
