We have a delicious dinner idea for you today! These Crispy Black Bean Tacos are so easy to make and taste delicious. You can even cook the meat and onion ahead of time as I did, and then just put it into the skillet to heat on the night you are ready to make your Crispy Black Bean Tacos, homemade salsa, and guacamole.
Having a menu planned out is one thing that I love doing. It really saves me the hassle of trying to come up with something every night and making sure I have all the ingredients on hand. It also means I can cook things, like the meat together ahead of time and save half of it for another meal later on (like I did with this one).

Here are the ingredients you will need to make your Crispy Black Bean Tacos:
- 1 lb. of ground beef
- 1/2 of large sweet yellow onion, diced
- 1 can of black beans, drained
- 1 can cream of corn
- cilantro
- taco seasoning
- corn tortillas
- cheese
- oil
First, you will take the beef and diced onion and cook until done. When they are finished cooking, drain the grease. Then add the black beans and the cream of corn, 1 tablespoon of fresh diced cilantro, 1/2 cup of water and 1 packet of taco seasoning. Mix together on simmer on med/low heat.
Once the meat mixture is done, you will take your griddle and turn it to 400 degrees. Add oil or spray with cooking spray and then start assembling your Crispy Black Bean Tacos.
Take a corn tortilla, spoon some of the meat mixture down the middle, and then sprinkle some cheese. Next, you will fold it in half, making sure the ingredients are evenly spread out inside the folded tortilla,
Then place it on the griddle to cook. The cooking spray will help it crisp nicely. You will want to spray the tops of the tortillas before you flip them so they can crisp on both sides.
If you don’t have any salsa or want to make your own (it takes like 5 min.) then this is how we make ours:
- 6 large tomatoes, diced petite
- 1/2 sweet yellow onion, diced petite
- 3 jalapenos, seeded, diced petite
- 2 tablespoons of fresh cilantro, diced
Then just mix it all together. You can also add some lime juice to give it more of a zing. To make it all a quick process, we use a vegetable chopper. It can do the tomatoes, onions, and peppers without any trouble. You can do a lot with one of these, and we actually use our many times a week in our cooking.
For the avocado, you can just leave it as plain avocado that it mixed, or you can add a few spoonfuls of your freshly made salsa and have delicious guacamole!
