Cucumber Ranch Bacon & Tomato Pasta

I love cooking and being in the kitchen, but one of the best things is when I have quick and easy, delicious recipes that take 30 minutes or less to make. It is simple, only 7 ingredients, and my family devoured it – even my two smallest cleaned their plates (which is rare). I used Cucumbers, Green Onions, Tomatoes, Ditalini Pasta, Bacon Bits, Shredded Chicken, and Hidden Valley Ranch Cucumber dressing. I also sprinkled fresh Parmesan cheese on top! Read on to see how quick and easy this was to put together, and then you can make it and let me know what you think.

Cucumber Ranch Bacon & Tomato Pasta

I stopped at Smith’s to get some groceries and saw this new Hidden Valley Ranch Cucumber flavor. I wanted to give it a try so I grabbed a box of ditalini pasta, bacon bits, a cucumber, green onions, tomatoes, and a can of shredded chicken, as well as the dressing, and then headed home to put something together. I love how the flavors came together and how well it turned out. It tastes great warm or cold!

In a pot, I cook about 2 cups of the ditalini pasta according to the package directions. While that was cooking I cut up 1 and 1/2 cucumbers, 1 large tomato, and 1 bunch of green onions and put them in the skillet. I also added a can of shredded chicken and about 1/2 cup of bacon bits. I turned the heat on low, and then added about 1/2 of the bottle of Cucumber dressing and stirred it all together.  Once the pasta was done I drained it and added it to the Cucumber mixture cooking over low heat and adding about 1/2 of the remaining dressing and stirring.

Cucumber Ranch Bacon & Tomato Pasta

Serve warm or cold with the dressing, bacon bits, fresh Parmesan, and rolls. It was such a great lunch. We also had sliced cucumbers that we dipped in the Ranch dressing and it was so good! This is a keeper for our family and I know that I will be making it again soon. This is great for one person or a large party. Other things you could add are Olives, peppers, and seasoning. Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 8 servings

Serving Size: 1 cup

Ingredients

  • Ditalini pasta
  • 1 and 1/2 cucumbers
  • 1 large tomato
  • 1 bunch of green onions
  • 1 can of shredded chicken
  • 1/2 cup of bacon bits
  • 1 bottle of Hidden Valley Ranch Cucumber dressing
  • Optional: Shredded Parmesan Cheese

Instructions

  • In a pot, bring water to a boil and cook 2 cups of the ditalini pasta according to the package directions
  • While the pasta is cooking, cut up 1 and 1/2 cucumbers, 1 large tomato, and 1 bunch of green onions and put them in the skillet.
  • Add a can of shredded chicken and about 1/2 cup of bacon bits to the mixture in the skillet.
  • Turn the heat on low, add about 1/2 of the bottle of Cucumber dressing, and stir it all together.
  • Once the pasta is done, drain it and add it to the Cucumber mixture cooking over low heat.
  • Add about 1/2 of the remaining dressing and stir.
  • Serve hot or cold.
  • (Optional: Sprinkle with fresh shredded Parmesan Cheese)

    Love bacon and ranch pasta, such a wonderful picnic side! Love the idea of adding tomatoes and cucumber, too. Will have to try this recipe!
