I love love love Easter. The bright colors, the fun and cute decor, and all of the fun treats and drinks you can make. In case you don’t know – I am obsessed wit Coconut right now. I was craving a strawberry slush and so I decided to have some fun and make it an Easter Slush. They are super easy to make, look really cool – and of course taste great!
Easter Slush with Coconut Rim
First off – you will want to make the colored coconut. This is as easy as putting shredded coconut into a tupperware, adding 4-5 drops of coconut, putting the lid on, and shaking. I did about 1/2 cup and probably could have done about 5 cups. Next you will line the rim of all your cups with the coconut. I used Karo Syrup. {see the picture below}
To coat the rim of the glass in coconut, just put a little Karo Syrup in one bowl, and the colored coconut in the other, then spin the rim of the glass in the syrup until it is coated. Then put straight down into the coconut and go up and down a few times spinning it slightly IN THE AIR so you can make sure the whole rim is coated.

For the Slush I put in about 8-9 strawberries (mine were frozen) and 1 cup of white grape juice. If you are going to use fresh strawberries make sure to add ice for the slush effect. I blended it until all of the strawberry was blended, but you can go it less if you want chunks in the drink.
Once you get your drink made, pour it into the coconut rimmed glasses – be sure to keep it at least 1/2 inch from the top or more. Then you will take a peep and using a sharp knife, you will cut a slit into it. Put it on the rim of the glass and squish the sides down so they stick to the glass.
I did it in two styles; an adult and a kid, lol – although the are both fun to drink out of and there is no alcohol so they are safe for any age. 100% juice. These are fun just because, for parties, Easter Dinner, or even for a date. I would love your feedback and variations if you try this.
