While we don’t really have any Hispanic roots, we still like to teach our kids about other cultures and their celebrations, so we have been learning a little about Cinco de Mayo. We all love “Mexican Food” and we eat it all the time, but some days are just so crazy, that I don’t always have time to make dinner. That is when I am so glad I can open my freezer and find yummy food like these El Monterey Taquitos . We also grabbed a bag of El Monterey burriots to enjoy as well. Together with our fresh grilled pineapple, and homemade Fresh Guacamole Recipe – made with Avocado, Tomatoes, Olives, Salsa and Sour Cream we had a yummy Cindo de Mayo meal!
The Guacamole was really easy to make and turned out SO GOOD! We just took 1 fresh Avocado, 1 large tomato, 10 olives, 1 scoop of sour cream, 1/4 cup of salsa, and seasoning to taste (salt, pepper, garlic). You will take the avocado meat and mush it with a fork, then add the diced tomatoes, chopped olives, sour cream and salsa and mix. You can add shredded cheese for even more flavor. The Fresh Guacamole turned out great as a dip for the Taquitos as well as for chips!
