My family loves cereal. We often eat it for more than breakfast – making it lunch or even dinner. I have gotten to the point where I like to incorporate cereal into our meals and desserts as part of the ingredients. We recently we made a funnel cake recipe made with cereal that was amazing! We used Berry Colossal Crunch for half and the new Kung Fu Panda Po Power Crunch cereal for the other half. I love how they both turned out! One is fruity and the perfect amount of sweet, and the other is chocolaty and perfect with a strawberry sauce. The recipe is very easy and it only takes about 20 minutes to make this delicious dessert.
To make the recipe you will need eggs, vanilla, milk, flour, sugar, baking powder, salt, and the cereal of choice blended in crumbs.
First turn on your deep fat fryer or take a skillet and heat it over med heat with about 1-2 cups of oil or shortening. Have this heating while you are making the batter. To make the batter you will take and beat 2 eggs, and then add 1/2 tsp of vanilla extract, and 2 cups of milk together in a bowl. Blend well. In another bowl you will blend 2 cups of all-purpose flour, 1 cup of cereal crumbs, 1/4 cup of sugar, 2 tsp. of baking powder, and 1/4 tsp of salt together.
Pour the flour mixture into the egg mixture and mix until smooth.
Now to make the funnel cake, you will take a funnel and hold your finger over the tip and pour mixture into the funnel on the top (about 1/2 cup full). Bring the funnel over the pan and remove your finger from the funnel spout and slowly move in circular motions overlaying the batter. Cook about 2 minutes on each side, making sure it is golden brown. Use tongs to get the cake out and put it on paper towels to soak up the excess grease. Top with fruit, powdered sugar, caramel, Dulce de leche, chocolate or any number of other delicious toppings.

I am amazed at how good these turned out and I know that my kids will be asking for them again and again. The Kung Fu Panda Po Power Crunch is a new product available in Walmart (you can save money using ibotta) and we loved the chocolaty marshmallow taste it added to the Funnel Cake Recipe. The Malt-O-Meal Berry Colossal Crunch cereal adds a good fruity flavor to the Funnel Cakes. I loved how both variations turned out. I would love to know what you think of this fun recipe!
