One snack that had always been in our cupboards is Goldfish crackers. My kids love all of the different flavors, and they are great for traveling and other on-the-go activities. Aside from the normal snacking, I also like to use them in recipes. Yup, Goldfish crackers make a great addition to many of the meals we cook. I recently made Goldfish crackers and Parmesan Crusted Pork Chops and they turned out amazing. They were super easy to put together and while they were baking we made cheesy mashed potatoes with a Goldfish crumble on top. These together with a green salad made a meal that my kids ask for all the time now.
I was at Walmart and I saw the big boxes of Goldfish crackers on rollback for $5.98 a box so I grabbed a couple. I also got the pork chops and potatoes. I had cheese, eggs and flour at home.
To make the Goldfish crackers and Parmesan crusted Pork Chops you are going to get three bowls and a glass baking dish out. I made this recipe for 5-6 chops, so you can adjust accordingly. In one bowl you will beat 3 eggs. In another bowl you will want to add 1 cup of flour. In the third bowl, dump crunched up Goldfish crackers and mix together with freshly grated Parmesan cheese.
To give it the yummy crust you are going to take a pork chop (or piece of chicken or steak or whatever meat you want) and rinse it under warm water. (Do not dry). Put the pork chop into the flour and coat on both sides. Next, you will dip it into the egg and coat on both sides, then you will put the chop into the Goldfish crackers and coat on both sides. Really push it down into the crackers to get them to stick. Take the coated piece of meat and place it into a greased glass baking dish. As you put them in, they can be touching – They will still cook fabulously.
Once you have them in the pan, you will put them into the oven at 350 degrees for about 30-45 minutes or until the internal temperature reaches 160 degrees. While the meat is cooking you can make the yummy cheese and Goldfish crackers creamy mashed potatoes. You will want to wash, peel, and dice about 6-8 medium sized potatoes. Put them into a pot of boiling water and cook for about 8-10 minutes.
Once you have the potatoes boiled, drain them completely and then add them back into the pot. Keep the temperature on about medium and add about 1/2 to 1 cup of milk, 1/2 stick of butter, 2 spoonfuls of sour cream, and a handful of shredded cheese. Mix and mash together until smooth. Put into a casserole dish and spread evenly and then sprinkle with a little more cheese and Goldfish crackers. You can crush them or add them whole. These turned out so great!
My kids had eaten what was left of the box within 24 hours of opening it. They love Goldfish crackers. While I like to use them for cooking in my recipes, they are just as happy eating them by the handfuls while they run around and play. The big boxes make it so much easier to store them as well as make sure that they have enough.
Be sure to keep an eye out for them next time you are at Walmart for the great rollback price for $5.98 a box! They are perfect for snacking and baking and anything else you feel like. I love watching my kids dance around laughing and smiling while they eat their Goldfish crackers. It is a beautiful fun memory for all of us – each time it happens.
