This time of year is wonderful because I have a garden full of fresh veggies that I can use in all of my recipes. My kids were craving pizza the other night, so we decided to make Grilled Alfredo, Chicken & Tomato Pizza with fresh Grilled Zucchini. They both turned out amazing! I want them to get used to how great fresh veggies really taste and how many ways they can be used. This is a great life skill to learn, and we are really blessed to be able to teach our kids about this by growing our own garden.
I am also teaching my kids the best ways to use and to cook fresh veggies. My kids love helping in the kitchen, so I give them easy tasks to do. My oldest helped me cut the Zucchini, so she can become familiar with the Kitchen and how to use knives correctly. All my kids love cooking and baking and so it makes it even more fun to be in the kitchen because they are always there with me.
To make the grilled Zucchini, you will rinse the skin well, then take a peeler and remove all, part, or none of the skin if you prefer. Cut it into slices that are about 1/2 inch thick, and then lay on a flat surface and spread (melted) butter or coconut oil on top and then sprinkle with your favorite seasoning. We love the Weber Garlic and Herb so we use that. Once these are ready, you put them on the grill (on low or BBQ setting), and turn them every few minutes until done to your taste. You can also sprinkle more seasoning on while you are cooking them for added flavor.
To make the yummy Grilled Alfredo, Chicken & Tomato Pizza’s you will need a few things. I used 100% whole wheat pita’s for the crust – but you can use whatever is similar. We laid them out on a pan to make it easier to transport to the grill. Spread Alfredo sauce over the whole top of the crust.
Next you will add (layered however you which) cooked shredded chicken, Mozzarella cheese, fresh cut green bell peppers, quartered cherry tomatoes and then we sprinkled some of that Weber Garlic and Herb seasoning over the top. They turned out amazing!
I put them on the grill and cooked them for about 10 minutes – which made them a bit crispy on the bottom – so I would cook them on the top rack and check after 5 minutes or so.
The Zucchini cooked well on the bottom on the low setting. As you can see, the pizza crisps up nicely and the cheese melts into a yummy gooey goodness.
My kids LOVED this and so I am sure it will be a hit with yours. You can add or take away whatever toppings you want – I am sure my hubby would have loved Onions, Mushrooms, and other things on his. These are great to make when you are in a hurry because it only takes about 30 minutes from start to finish (or less) and it is a great meal.

- Next, you will add (layered however you wish) cooked shredded chicken, Mozzarella cheese, fresh-cut green bell peppers, and quartered cherry tomatoes, and then we sprinkled some of that Weber Garlic and Herb seasoning over the top.
- Put them on the grill and cook them for about 10 minutes (preferably on the top rack and check after 5 minutes or so.
- It will be done when the crust is nice and crispy and the cheese is melted. Be careful not to overcook them and burn the bottoms.
