With spring in the air, I couldn’t wait to get outside this last weekend and grill up a storm. 2 of the 3 days we used our grill and I look forward to many more. While hotdogs and hamburgers are great – I wanted to try something different Saturday – and I was craving chicken. Lemon Pepper Chicken! While I was at the store I saw the new Country Time Lemonade Starters and knew that it would be the perfect marinade for the chicken. I grabbed the Classic Lemonade to use in the marinade and the Berry Lemonade to drink with our yummy meal.
To make the marinade for your Lemon Pepper Chicken, you will add about 2 TBSP of Country Time Lemonade Starters Classic Lemonade flavor and about 1/2-1 cups of water in a baggie. I then added 7 thawed and washed chicken breast (boneless/skinless) to the bag. You can add whatever kind of chicken you want – it will still taste great!
Once I had the chicken in the marinade, I took and sliced two lemons – I will do them a little thicker next time – but I loved how it turned out! I used the lemons on the grill to put the chicken on as I grilled it. The chicken still grilled to perfection – but it didn’t stick to the grill. The lemon slices also infused their flavor into the chicken as they grilled.
About halfway through – I took a basting brush and poured some of the Lemonade into a small bowl and basted both side of the chicken and then ground some more pepper onto each piece. I turned them about every 3-4 minutes to keep the edges that were touching the grill from sticking.
I let them grill for about 15 minutes- (maybe less or more). I used a food thermometer to make sure they were cooked to 165 degrees. While the chicken was cooking – inside I was cooking baked potatoes and making a salad. I had my kids help me with the table. We also made a pitcher of the Berry Lemonade to go with the meal.
I love how the chicken turned out! We also put fresh lemons on the table so you could squeeze the juice over the chicken before eating. In less than 30 minutes we had an amazing dinner that everyone loved – the only complaint? I didn’t make enough! lol.
You can pick up the Country Time Lemonade Starters at Walmart in the drink mix aisle. I love having them on hand – they are good for a lot of different recipes as well as make a delicious drink. You just add the mix to a pitcher of water and it makes about 6 quarts. It has 50% less sugar than leading regular sodas and easy and convenient! I also love using the berry lemonade, adding real berries and making homemade popsicles. Since the lemonade has real lemon juice in it, they are perfection!
