One of my (and fortunately my kids’ favorite things to eat is grilled cheese and tomato soup. We have eaten the canned version for years because – – – well – – – I don’t really have a good excuse as to why I never made a homemade version…but I finally tried it and it was a hit. I was totally blown away by how much better it tastes and it has ruined me (as in I won’t eat the canned stuff anymore) for life. Read on to find out our Homemade Tomato Soup Recipe.
I used fresh tomatoes, not canned. This I think will make a little difference in the taste. Fresh tomatoes, especially right from your garden are the best. I really simplified my soup – as in I didn’t add onions – because well – they don’t belong in my tomato soup. You just need to grab tomatoes, fresh basil, salt and pepper, chicken broth or tomato juice, and heavy cream, and you will have what you need to make yummy Homemade Tomato Soup.
Yield: 4 servings
Ingredients
- 5-6 Roma Tomatoes
- 1/2 tbsp of diced garlic
- 1 14 oz can of tomato juice
- 1 14 oz can of chicken broth (low-sodium)
- 1-2 tsp of brown sugar

- 1/3 cup fresh basil (plus more for topping if desired)
- 1/2-1 cup of heavy whipping cream
- Shredded Cheese for topping
- Bread or crackers (or grilled cheese) for dipping
Instructions
- Cut off the top and bottom of the tomato and quarter
- Add all tomato chunks, basil, and a can of tomato juice to the blender and puree
- Add tomato puree, chicken broth, garlic, and brown sugar to the pot and heat on medium-high. Bring mixture to a boil and then reduce heat to simmer.
- Simmer for about 15-20 minutes stirring occasionally.
- Continue to simmer and stir in heavy cream
- Remove from heat and serve warm with cheese and fresh basil sprinkled on top.
- Grilled Cheese, crusty bread, or breadsticks are perfect for dipping.
