My family loves Italian food. I love pasta and cheese and sauce. All of the things that I shouldn’t eat but can’t help once in a while, so I wanted to do something different this time. We were all craving Lasagna, but I thought it would be fun to make it more “kid friendly” so we tried doing Lasagna Roll ups. They turned out amazing. They were easy to make, but it took a little longer than normal. (for full directions see below)
Start a pot of water boiling. When it comes to a rolling boil, add 12 lasagna noodles and cook according to package directions. Cook burger (or whatever kind of meat you would like to add – if doing meatless – don’t worry about this step). Add 1/3 jar of sauce to hamburger and remove from heat.
While the burger and noodles are cooking, make cheese mixture. Add 1/2 cup of mozzarella to 16 oz of ricotta cheese, and 1 package of feta cheese. Add two eggs and mix until blended. Take a few sheets of paper towels and lay them out on the counter the place a sheet of parchment over the top. Lay out 4 noodles at a time to cool and dry. Turn oven on to 350 degrees to preheat. Use a 11″ × 15″ glass dish. Spray with cooking spray to prevent sticking.
Take a noodle and put a thin layer of the cheese mixture along the whole noodle. Then take a thin layer of the meat mixture and put it on top across the whole noodle. Take a couple spoon fulls of spaghetti sauce and put that across the whole noodle then sprinkle with a little bit of mozzarella cheese. Start at one end and start rolling until the lasagna noodle is rolled up.
Repeat this 12 times or until you pan is full. If served with other stuff like a salad and breadsticks, most people will only eat one because they are pretty filling. This pan of 12 fed our family of 6 for two meals.
Cover roll ups with remaining sauce and sprinkle with remaining cheese. Cover with tinfoil and cook for 45 minutes. Remove tinfoil for last 10 minutes. Let stand for 5 minutes before serving.

We hope you enjoy this lasagna roll ups recipe as much as we did. You can store leftovers in an airtight container and they will still taste just as good. We ate these with a green salad and cheesy French bread. It was very yummy.
