This Mexican chicken drumsticks recipe is so simple to put together and is ready to eat in about 40 mins (with minimal work). It is also one that your kids will enjoy helping you prepare as well as eat. I served these drumsticks with rice and salsa. You can also put out sour cream, cheese, etc if they want to top the chicken like a taco.
MEXICAN CHICKEN DRUMSTICKS INGREDIENTS
- 1 package of fresh (or frozen) chicken drumsticks
- 2 tbsp of sour cream
- 1-2 tbsp of taco seasoning mix
- 1 tsp of chile powder
- 1-2 tbsp of minced garlic
- 2 cups of salsa or Picante sauce
- 1/2 cup of diced sweet onion (1/2 of a large onion or 1 small onion)
- 1 tbsp of lime juice (or juice of 1 whole lime)
MEXICAN CHICKEN DRUMSTICKS DIRECTIONS
- Preheat oven to 400 degrees
- Use a large glass baking dish and spray it with cooking spray
- Line drumsticks up in a pan so they all fit
- In a separate bowl mix the sour cream, taco seasoning, minced garlic, salsa, and lime juice togther
- Pour mixture over chicken and use tongs to rotate chicken so all sides are coated evenly
- Sprinkle chile powder lightly over chicken (depending on how spicy you want it to be)
- Top with diced onions
- Insert meat thermometer (I freaking love this one on Amazon)
- Bake for about 30 minutes or until internal temps reach at least 165 degrees.
In the meantime, you can set your rice up in your rice cooker and have that done about the same time as the chicken! I love this rice cooker. I also added about 2 tsp of lime juice and a pinch of dried cilantro before cooking. You can also heat up some black beans to serve with this.
This is a great meal for busy nights. You can even put the chicken and sauce into a bag and let it marinade with the onions and everything, then just dump it into a baking dish and cook it when you are ready.
