If you have kids or want to make some fun finger foods, these Mini Pot Pies are perfect for dinner or a snack!
I love pot pie. I have made it all sorts of different ways and all sorts of different sizes, but one of my favorite ways to make it is this Mini Pot Pie recipe. The crust is my favorite part and there is more crust this way. They are also great for young kids since they are easier to handle and are smaller portions.
You can make a chicken or beef filling with potatoes, carrots, celery, and onions. I used a pie crust and cut it into sections, put them into a greased cupcake pan and then filled them with the filling and then folded the crust over and secured it.
I made a pot roast for dinner the night before and used the leftovers to make these mini pot pies. It was perfect and the flavors were delicious. So you can make a beef pot roast for dinner one night and then the next or a couple of days later, use the leftover to make these.

Once you have your filling, you will roll out your thawed pie crust and cut it into 9-12 pieces.
Then you will spray your cupcake pan with cooking spray.
Next, take the dough and form it into the cupcake pan as shown in the picture below. Leave edges open so you can cover the top after you put the filling inside.
Once the filling is inside, you will bring the corners together and try to cover as much of the top as you can. You can use smaller pieces to cover the top if needed.
Once they are made, you will bake them at 350 degrees for about 15 minutes or until brown on top and dough is cooked through. Since the filling is pre-cooked, you don’t have to worry about it getting cooked, just warmed up.
These are delicious served with a green salad or fresh fruit. They are also great for lunch boxes, being easy to microwave for a delicious meal at work.
