Pressure Cooker Pork Carnitas (Mexican Pulled Pork)

Pressure Cooker Pork Carnitas

I love having a delicious meal ready to serve for dinner with little prep and no maintenance cooking. That is why I love electric pressure cookers! I just got a Mealthy Multipot and I am loving how easy it is to prep and cook dinner and have a delicious meal ready to eat in no time. Especially on busy school nights. We recently made Pressure Cooker Pork Carnitas (Mexican Pulled Pork) and it is so good, I had to share the recipe with you.

To make this dish you will need the following:

  • 2 pounds of pork roast cut into chunks
  • salt
  • garlic pepper
  • Dried Oregano
  • Dried Cilantro
  • 1 clove of fresh garlic sliced
  • 1 purple/red onion chopped
  • 1/2 cup Orange Juice
  • 2 limes cut in half
  • 1-2 cups of water
  • olives, diced
  • fresh cilantro, chopped
  • guacamole salsa
  • small corn tortillas (heated on both sides on a griddle or pan) or small flour tortillas

Set your Mealthy MultiPot to saute and add the meat, seasonings and squeeze the lime juice over the meat. Turn the pork evenly to brown on all sides. Once the meat is browned, you will add the chopped onion, sliced garlic, orange juice, limes, and water. Put the lid on and cook on high for 45 minutes. Select the MEAT option.

Make sure the steam release is set to sealing and NOT venting. While the meat is cooking, prep the tortillas, tomatoes, avocado, olives, green onions, and cilantro. You may also want to serve with guacamole salsa, pico de gallo and or salsa and chips. You can premake these and set them on the table, or put everything on the table and let everyone make their own (which is what I do). You can even prep most of this ahead of time (everything but the avocado) and have it so that it makes a really quick meal when you are ready. 

When the pork is done cooking in the Mealthy MultiPot, you can quick release the pressure or turn off the Mealthy MultiPot and let the pressure naturally release (can take up to 15 minutes). Be careful taking the lid off as there may be steam that will release and it will be hot. Use tongs to get the meat out and put it on a cookie sheet. Set your oven to broil. While it is heating up, you will use forks and shred it.

When the broiler is ready, put the cookie sheet full of shredded pork in the oven for 5 minutes, take it out, mix it around and spread it back and put it back in for another 5 minutes. You may want to lightly sprinkle with brown sugar before putting it into the oven. Take it out and your crispy delicious meat is ready to eat.

Put a serving onto a tortilla, add guacamole salsa, tomatoes, green onions, cilantro, avocado, olives, salsa (or pico de gallo) or you may choose to do a fruit topping like a pineapple or mango salsa.
