St. Patrick’s Day is a fun holiday to celebrate with “gold”, “rainbows”, and all things green! My daughter and I had a great time making these Rainbow Chocolate Dipped Oreo Cookies. We used 6 different colors; Red, Green, Yellow, Purple, Blue, and Orange. All you need is food coloring, white almond bark, sprinkles, and Oreo cookies.
To improve your experience, we also recommend a silicone baking mat to put the cookies on while the chocolate cools as well as a microwave-safe glass dish like Pyrex to heat the chocolate in.
Rainbow Chocolate Dipped Oreo Cookies
To make your cookies, you will first want to gather all of the supplies. Once you heat the chocolate, you won’t have time to look for things, so make sure you have the colors, sprinkles, and cookies all set out as well as the mat, glass dishes and a couple of forks.
You will want one glass bowl for each color (or you can use one bigger glass bowl to melt the chocolate and then put it into smaller bowls to add the colors). To make 18 cookies (3 of each color) you will want to put 1 square of the almond bark (about 2 oz.) into the dish, and microwave it for 45 seconds. Take it out, “stir” it and then put it back in for 30 seconds. This should fully melt the square with some stirring.
With the chocolate melted, take a toothpick and dip it into the gel color (or add drops of the liquid) and mix until you get the desired color. I like the Wilton Gel Food coloring. With the chocolate mixed with the color, you will take the Oreo cookies one at a time and put them into the chocolate. Use the fork to turn it over to cover it completely. Then use the fork to take it out of the chocolate and lay it flat on a silicone baking mat to cool.
Before the chocolate begins to cool, you will want to add the sprinkles or other toppings so they will stick securely. You can also take any excess chocolate and drizzle it over the top. You can see in the pictures below the different ways we decorated ours. Do this with the other two Oreos.
You will use this same process for the next 5 colors. You will also want to do one set with just the white chocolate so you can spray them with the edible gold color mist. (I got mine at Walmart for a few bucks).
