I love cooking for my family. It is so fun to bring ingredients together to create a delicious and satisfying meal. One of our favorite dishes is Chili, so I decided to make Slow Cooker Black Bean Chili Crostini’s. I also wanted to have Virgin Raspberry Pineapple Mocktail’s with Fruit Juice Ice Cubes (ice cubes made with fruit juice instead of water and real fruit added). I like to have a meal that comes together quickly, but still tastes like I spent all day in the kitchen. That is one reason that I love my slow cooker. I can put ingredients together in the morning in my slow cooker, and later that day, dinner comes together easy for a stress free meal that saves me time and my family loves.
The black bean chili is very easy to put together in the slow cooker. I used Hunt’s Chili seasoned tomato sauce, RO*TEL diced tomatoes with Chili’s, 1 can of black beans (with liquid), 1 can of corn (drained), and 1 can of chili beans (with liquid). I also browned 1 LB of ground pork and added a packet of chili seasoning. I put everything together in the slow cooker and let it cook together for about 4 hours. The house smelled amazing while it was cooking. My kids (and hubby) kept asking when it would be done. The great thing is, I can keep most the ingredients for the Black Bean chili on hand in my pantry, and make it when we want it.
Once the Black Bean Chili is done, you will put the Crostini’s together. First, turn your oven on to HI broil. While it is heating, take the Everything Italian Bread (we got it from the bakery at Walmart) and slice it and lay them out on a baking sheet. Then you will take spoonfuls of the chili and spread it on the bread. Sprinkle with fresh grated Parmesan cheese to top it off. Put the sheet into the oven and cook for about 3 minutes (this will melt the cheese and crust the bread).
I love how the Black Bean Chili Crostini’s turned out. My family ate them so fast, I only got 1! This is a great combination, and the Everything Italian Bread combined with the Parmesan goes perfect with the Black Bean Chili. While the Chili was cooking in the slow cooker, I put together some delicious fruit juice ice cubes. They are real juice with real fruit that we put into our mocktails, to keep the drink cold and prevent it from getting watered down. This is a fun and easy kitchen hack that everyone will love. As the ice cube melts, you will have real fruit in your drink. My kids love to sneak these because of the real fruit juice and the fresh fruit it is like a popsicle to them.
Overall this meal was fun and easy to put together. The slow cooker Black Bean Chili cooked while I worked and was ready to put together in a quick meal when it was time for dinner. It literally took less than 10 minutes to make the Crostini’s because the chili was heated and cooked. Broiling the bread will make it crispy and melt the cheese for a perfect combination. For 1 serving mix 2/3 cup of Pineapple juice, 1/2 cup of Cranberry Raspberry Juice and 1/2 cup of lemon-lime soda. Then I added about 1 tsp (give or take) of Grenadine syrup to color the bottom of the drink and add that sweetness. We made the ice cubes with the pineapple juice and diced peaches in one and the Raspberry Cranberry juice with raspberries in the other one. Both turned out amazing! We picked up everything we needed at Walmart. They have a great selection and I love their bakery with the Everything french bread.
