Cooking with my Slow Cooker is something I love to do. It is so easy to throw a bunch of yummy ingredients together and let them cook for hours while you take care of everything else for the day, and when you are ready – so is dinner!

We used leftover Bacon that we had cooked the night before. We also had sauteed green peppers, red peppers, and onions the night before and used those in this. (We had omelets the night before and so several of the ingredients could be used, but it did not seem like we were eating the same meal twice).
The chicken cooked perfectly, and shredded without any problems. It is really an easy dish because you can add what you want and like to it and it will come out tasting great. Make sure you go easy on the liquids because if you add too much it will be more like a soup. Chicken will release water as it cooks, and the liquid from the beans plus about 1 cup of water was perfect for the 4 hours I cooked it. If you cook it longer you will want to add more water to keep it from drying out.
Slow Cooker Chicken Bacon Tex Mex Recipe
Ingredients:
- 1 large chicken breast (boneless skinless, about 1.5-2 lbs)
- 1 red pepper
- 1 green pepper
- 1 lb of bacon
- 1 md- lg onion (depends on how much you want in your dinner)
- Taco seasoning
- 1 can of black beans (do NOT drain)
- Water or chicken broth (about 1-2 cups)
- Black pepper to taste
Directions:
- Cook bacon (cook it in the oven on a cookie sheet at 450 degrees until done)
- Turn on slow cooker to high (for 4 hour cooking time) or low (for about 6-8 hours cooking time)
- While your slow cooker is heating up, wash and dice the green pepper, red pepper, and onion. Add to slow cooker.
- Cut bacon into 1/2 pieces and add to slow cooker
- Open can of black beans and add (juice and all) into slow cooker
- Add about 1/4 cup of taco seasoning into slow cooker
- Add about 1/2 – 1 cup of water or broth for 4 hours, or 1 1/2-2 cups of water or broth for 6-8 hours.
- Mix ingredients together.
- Cut chicken in half lengthwise (on its side) so that it is not so thick and but both halves into slow cooker. Bury the chicken towards the bottom of the slow cooker and cover tops with the mixture.
- Sprinkle about 1 tsp of Taco seasoning over the top, and black pepper as desired.
- Cook on high for about 4 hours or until chicken is done or cook on low for about 6-8 hours or until chicken is done.
- Be sure to check occasionally if you can to see if you need to add more liquid. (this will depend on slow cooker and altitude).
- Towards the end you should be able to take two forks and shred the chicken by pulling in opposite directions.
- Mix together and let cook for a while longer while you get the tortillas and toppings ready.
- Serve on flour tortillas, with cheese, tomatoes, lettuce, and sour cream. These are also great topped with a spoonful of enchilada green or red sauce.
