Slow Cooker Peperoncini Pork Roast with Vegetables Recipe
I recently discovered that I really like Peperoncini’s! So over the last couple of weeks I have been experimenting with them and trying new ways to cook with them. My latest experiment was with a pork roast – and I am glad to say it turned out – quite well – and the whole thing got ate in one sitting! lol. It was super easy to put together and can cook for 6-8 hours.
Slow Cooker Peperoncini Pork Roast with Vegetables Recipe
INGREDIENTS:
- 2 lbs pork roast
- 1 jar of Peperonchini’s
- 1 bag of mini carrots
- 1/2 cup of sliced mushrooms
- 1 1/2 tbsp of minced garlic
- Seasonings
DIRECTIONS:
- Take carrots, mushrooms, and Peperoncinis and add into crock pot.
- Add roast to top
- Pour half the jar of peperoncinis juice over roast and vegetables
- Sprinkle to taste with the minced garlic, parsley, sea salt, pepper, oregano, and other seasonings.
- Cook on high for about 4-5 hours or low for 7-8 hours until meat and be separated easily with forks.

This sounds SO good! I just love the flavor of peperoncinis and like that this uses pork instead of the usual beef.
It really surprised me at how great it tastes. The juice makes the difference.
