I love using my slow cooker because I can put everything in it, set it, and forget about it until dinner time. We have shared several slow cooker recipes over the years (view them all here) but this Slow Cooker Taco Soup is always a favorite. You can also make it in an electric pressure cooker. We will share the directions for that below.
To make this delicious hearty meal, you will need the following:
- 2 15 oz. cans of whole kernel corn, drained
- 1 15 oz. can of black beans, undrained
- 1 15 oz. can of kidney beans, undrained
- 1 15 oz. can of pinto beans, undrained
- 1 28 oz. can of diced tomatoes, undrained
- 1 4oz. can of diced jalapenos
- 1 4oz. can of diced green chilies
- 1 lb. of cooked ground beef
- 1 small sweet onion, diced
- 2 cups of cooked rice
- 1 15 oz can of water
- 2 packets of Taco Seasoning (or to taste)
Slow Cooker Taco Soup Directions:
- Turn slow cooker onto a low heat
- Add all of the cans of beans, corn, tomatoes, and peppers
- Add onion, burger, and rice
- Pour water over the top
- Stir together until well blended
- Add taco seasoning and stir again
- Cover with lid and cook on low for up to 8 hours – it will be hot enough to eat in about 2 hours. If you want it done faster – cook on hi for 1 hour. Having the rice and burger pre-cooked saves a lot of time in the cooking.

Want to use chicken instead?
You could sub out 1 lb of raw chicken breast and add the rice uncooked – just add a little extra water. If you add the raw chicken you will have to cook on low for 6-7 hours or on high for 3-4. The chicken should shred easily when fully cooked.
Electric Pressure Cooker Directions
If you want to make it in an electric pressure cooker, you can turn it to Brown/Saute and cook the burger and onion in the pan. Drain any grease and then add all of the beans, corn, tomatoes, peppers, and rice. Add 2 cups of water instead of 1 and add your taco seasoning and then stir everything together. Put the lid on and cook for 15 minutes. When it is done, you can release the steam or let it naturally release.
If you are doing chicken instead of beef, do not precook the meat. Just add all of the ingredients together and then cook for 25 minutes to make sure the chicken is tender and shreds well. When it is done, you can release the steam or let it naturally release.
