My kids LOVE cupcakes, so we decided to make them tonight. I wanted to do something fun for Valentine’s since it is coming soon, so we make pink Valentine Cupcakes with cream cheese frosting. We also took some of them and cut hearts out of the tops. I think they turned out SO CUTE! We had a lot of fun decorating them – but of course the best part was eating them 😉 We used three ingredients – Cake mix, orange juice, and oil. They turned out amazing!
Take the (white) cake mix and put it all into one mixing bowl. Add about 1 1/2 cups of Orange Juice and about 2 tbsp of oil (you can use coconut oil). Mix well. If you want to color it I would recommend using a white cake mix like we did – or you can buy like a red velvet cake mix. I used pink food coloring that I found at the store so I didn’t have to mix colors to get it. I tried making a dark red, but it just looked dark pink – so that is why mine are separated. You can do it with purple or some other fun Valentine color.
Once you have your mix ready, put it into a muffin tin with liners or something like the Silicone Cupcake Pan like I am using. I love it! It is easy to clean and all in one piece so I can even throw it into the dishwasher. You set it right on the oven rack. I don’t use liners with it (but you can add them afterwards for decoration, and they don’t stick to the cupcake). You will want to fill each cup about 2/3 full of batter. Put in the oven and bake at 350 degrees for about 18-20 minutes.
Once they are done, you can take them out and place them on a rack to cool. I put my Valentine Cupcakes into cute cupcake liners. I frosted a few of them and added sprinkles, and they turned out really nice, but my favorite is this heart cupcake. It is so easy to make and looks amazing! Take the cupcake and carefully cut the top off. Set aside. You will add a layer of frosting to the top of the bottom half (think of it as a sandwich). Take the top of the cupcake and using a heart cookie cutter or knife, cut out a heart in your cupcake. Put the top of the cupcake back on the bottom (with the layer of frosting between them) and then use small spoons to fill the heart up with frosting.
They turned out really good and my kids loved the hearts! These will make great gifts for their teachers, family and friends. I also wanted to share some other Valentine Cupcakes that I found and love. ENJOY!
